Classic coleslaw recipe

Cabbage, onion and carrot are shredded and then coated in a creamy dressing spiked with a little mustard and vinegar, making for a truly fabulous coleslaw - the perfect burger side! See method
Ingredients
- ½ red cabbage, shredded
- ½ savoy cabbage, shredded
- ½ red onion, finely sliced
- 1 carrot, grated
- 2 tbsp mayonnaise
- 4 tbsp natural yogurt
- 2 tsp Dijon mustard
- ½ tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp cayenne pepper
- handful chives, finely chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Put the cabbage, onion, carrots and red onion in a large bowl.
- In a smaller bowl, combine the mayonnaise, yogurt, mustard, olive oil, vinegar, cayenne pepper and chives. Season well with salt and pepper, then pour onto the vegetables. Toss to combine, then serve.
