These air-fryer scones have a secret ingredient that'll get everyone talking. Creamy yet light in texture, sweet with a hint of vanilla, this could become your go-to scone recipe for cream teas. And if you don't have an air-fryer, you can always bake them in the oven. See method
Ingredients
- 350g self-raising flour
- 1 tbsp baking powder
- 60g caster sugar
- 120ml double cream
- 120ml cream soda or lemonade
- 1 egg, beaten
- clotted cream, to serve (optional)
- jam, to serve (optional)
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method
- Heat the air-fryer to 180°C. Mix together the flour, baking powder and sugar in a bowl, then make a well in the centre. Pour in the double cream and cream soda or lemonade and mix with a wooden spoon until it just comes together. Briefly knead the dough and shape into a round.
- Roll out on a lightly floured surface to 2cm thick, then cut out as many circles as you can using a round 6cm cutter (fluted, if you prefer). Gently re-roll the remaining dough, then cut out more circles until you have enough for 10 scones.
- Lightly brush the tops with the beaten egg, then air-fry for 12 mins or until golden. You may need to do this in batches. Leave to cool on a wire rack, before serving with clotted cream and jam, if you like.
Tip: No air-fryer? Bake on a baking tray at gas 6, 200°C, fan 180°C for 12-14 mins until lightly golden on top.
