Air-fryer pork schnitzels recipe

Enjoy all the crispiness of a schnitzel but without the frying, thanks to your air-fryer! If you prefer, you can swap the pork for chicken breasts or roasted aubergine slices. Serve with a zingy slaw for freshness. See method
Ingredients
- ½ red onion, finely sliced
- 1 lemon, ½ juiced, ½ cut into wedges
- 2 carrots, scrubbed and finely shredded
- 160g red cabbage, finely shredded, woody core discarded
- 10g fresh flat-leaf parsley, leaves chopped
- 400g pack Tesco Finest pork loin steaks
- 2 heaped tbsp plain flour
- 1 egg, beaten
- 50g panko breadcrumbs
- 1 heaped tbsp sesame seeds
- 1 tbsp olive oil
If you don't have red onions, try using white, brown or spring onions

Method
- For the slaw, mix the onion with the lemon juice and a pinch of salt. Add the shredded carrots, cabbage and parsley on top, ready to mix just before serving.
- Place the pork steaks between sheets of baking paper, then use a rolling pin to bash them to roughly 5mm thick. Put the flour, the beaten eggs, and the breadcrumbs with the sesame seeds in 3 separate bowls.
- Preheat the air-fryer to 200°C. Season the pork, then dip into the flour, then the egg and, finally , in the breadcrumb and seed mix. Drizzle with the oil and place in the air-fryer in a single layer for 15 mins, turning halfway, until golden, crisp and cooked through.
- Mix the slaw and serve with the crispy schnitzels and lemon wedges.
Freezing and defrosting guidelines
Freeze the schnitzels only; freeze flat, layered between baking paper to prevent sticking, in an airtight container. Defrost completely in the fridge before cooking.
