This spicy green sauce is very popular is South America. With its fresh coriander and fiery jalapeños it will pack a punch on any dinner table or as a perfect match to a summer BBQ. See method
Ingredients
- 6 large green jalapeño chillies, deseeded and chopped
- 4 spring onions, minced
- 1 small white onion, peeled and roughly chopped
- 1 small garlic clove, peeled
- 1 bunch coriander, leaves and stems
- 2 tbsp red wine vinegar or lime juice
- 4 tbsp mayonnaise or mild olive oil
- 80g (3oz) soft white cheese (feta or ricotta)
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Put all the ingredients in a small food processor and blend until smooth. If you like a bit more of a kick, keep the seeds in the chillies. If you don't have fresh jalapeños you can always use jarred, but make sure you don't add any of the liquid from the jar.
- Season to taste with salt and pepper. Adjust the consistency with a little water if necessary.
Serve with sweet potato fries.
