Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Line 2 baking sheets with baking paper.
- Peel the apples and cut each crosswise into 4 slices of equal thickness. Cut out the cores. Combine the sugar and cinnamon in a bowl. Dip the apple slices in the cinnamon sugar to coat and place on a board.
- Unroll the pastry with the longest edge facing you. Cut into 24 equal strips, approximately 1.5cm-wide. Wrap two strips around each of the apple slices, leaving little gaps as you go. Tuck the tail ends of pastry underneath the slices and lay, spaced apart, on the baking sheets. Brush the pastry with the beaten egg and sprinkle over the remaining cinnamon sugar. Bake for 25-30 mins, until the pastry has risen, is golden and crisp and the apples are tender. Keep an eye on the doughnuts as they bake to ensure the sugar doesn’t burn.
- Serve the doughnuts warm with cream or ice cream.
