This vibrant dish makes the most of Kanzi apples, dessert apples with a mildly tart flavour. Add to date and blue cheese for a sweet, sharp salad melange that’s bursting with spring flavour. See method
Ingredients
- 1 Kanzi® apple, cored and thinly sliced
- ½ lemon
- 150g dates, stoned and chopped
- 2 little gem lettuce, leaves separated
- 40g watercress
- 75g blue cheese
For the dressing:
- 2 tbsp cider vinegar
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp clear honey

Method
- For the dressing, put the vinegar, oil, mustard and honey in a lidded jar. Screw the lid on tightly and shake well, until combined. Set aside.
- Put the apple slices in a large bowl, squeeze over the lemon juice and toss to coat.
- Add the dates, lettuce and watercress. Pour over the dressing and gently mix, until combined. Arrange the salad on a serving plate and crumble over the cheese.
