Ingredients
- 1 tbsp olive oil
- 2 red onions
- 350g Fusilli Pasta
- 1 x 330g pack of bacon, cut into strips
- 150g soft blue cheese, cubed
- handful chives, chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Bring a pan of water to the boil and cook the pasta following pack instructions.
- Heat the oil in a frying pan until hot and fry the onion for about 5 minutes until lightly golden and softened. Add the bacon and fry for a few minutes more until cooked through.
- Drain the pasta and add to the bacon and onions along with the cubes of cheese. Turn the heat down and toss everything, allowing the cheese to melt a little. Season, scatter over the chopped chives and serve.
