Ingredients
- 4 gala apples, cored
- 25g unsalted butter, softened
- 100g (3 1⁄2oz) light brown muscovado sugar
- pinch of salt
- 75ml double cream
- 1⁄2tsp ground ginger
- 1⁄2tsp ground cinnamon
- 75g (3oz) pecans, chopped

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Slice the apples horizontally (into about 8-10 slices per apple) and reassemble. Put the apples in a baking dish.
- Beat together the butter, 75g (3oz) sugar, the salt, 2 tbsp cream and the spices. Stir in the pecans and spoon the mixture into the centre of each apple, piling it up on top.
- Pour 25ml (1fl oz) water, the rest of the sugar and the remaining cream into the dish around the apples (this will form a toffee sauce as the apples cook). Bake for 35-40 minutes, stirring the sauce occasionally and basting the apples, until soft and lightly browned. Serve warm with vanilla ice cream, cream or custard.
