Baked falafel bites recipe

Hosting a Christmas party this year? Make these baked falafel bites for a gluten-free and vegan canapé - simply blitz in a food processor and bake until irresistibly crisp and golden. See method
Ingredients
- 1 tbsp olive oil, plus extra for brushing
- 1 red onion, peeled and diced
- 100g gluten-free oats
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 x 400g tin chickpeas
- 1 garlic clove, peeled
- 30g flat leaf parsley, roughly chopped
- 30g coriander, leaves picked and roughly chopped
- pinch of cayenne pepper
- 1 lemon, zested and juiced
- free-from yoghurt and lemon wedges, to serve (optional)
If you don't have red onions, try using white, brown or spring onions

Method
- Preheat the oven to gas 6, 200°C, fan 180deg;C. Heat the oil in a small saucepan, add the red onion and cook over a gentle heat for 10 mins until softened.
- In a food processor, blitz the oats to a fine crumb. Add the cooked red onion and all remaining ingredients. Season with pepper and blitz to a thick paste.
- Line a baking sheet with nonstick baking paper. Scoop 2 tbsp portions of the mixture and shape into balls with damp hands. The mix should make about 18-20 balls.
- Brush with oil, then bake for 20 mins until set and a little golden. Serve with lemon wedges and free-from yogurt, if using.
Tip: Try serving with lentils and salad for a delicious light meal.
