Liven things up for Pancake Day with these seriously sweet s'mores galettes. Stuffed with marshmallows, banana, dark chocolate and crumbled Biscoff biscuits, they're bound to be a hit! See method
Ingredients
- 80g buckwheat flour (or plain wholemeal flour)
- 1 large egg, lightly beaten
- 250ml semi-skimmed milk
- 1 tbsp unsalted butter
For the banoffee filling
- 2 bananas, sliced
- 100g dark chocolate, roughly chopped
- 100g marshmallows, halved
- 4 Biscoff biscuits, crumbled

Method
- Put the flour into a small mixing bowl, then slowly whisk in the egg and milk until well combined and no lumps remain. Chill for 30 mins.
- Heat the grill to high. Melt a little butter in a 30cm frying pan set over a medium high heat and ladle in a quarter of the batter. Swirl the pan until it’s covered, then cook for 2-3 mins on each side until golden brown. Remove the galette to a plate and continue to make three more.
- Put one galette onto a baking tray and scatter a quarter of the chocolate over the centre, leaving a 7cm border all around. Top with a quarter of the banana, then a quarter of the marshmallows, then fold over four edges of the galettes to make a square. Repeat with the remaining three galettes.
- Put the galettes under the grill for 1-2 mins until the chocolate and marshmallow have melted and there is a burnished top. Serve scattered with the biscuit crumbles.
