- 150g unsalted butter, at room temperature
- 150g caster sugar
- 4 tbsp brandy

Method
- Either using a food mixer with a paddle attachment or a bowl and an electric handwhisk, beat the butter until pale, then add the sugar and beat for 1-2 mins until pale and fluffy.
- Add the brandy and 2 tbsp boiling water, beat until smooth, then chill until needed. It will keep for 3-4 days covered in the fridge.
