This easy-to-make jam is a great way to make the most of blackberry season. It's made with just 3 ingredients and tastes great on top of toast or porridge. This recipe can be easily halved or doubled. See method

- 1kg blackberries, fresh or frozen
- 850g jam sugar
- ½ lemon, juiced

Method
- Mix the blackberries and sugar in a non-metallic bowl, cover with a clean tea towel and leave to macerate overnight, allowing the sugar to partially dissolve into the berries.
- When ready to cook, place a side plate in the freeze for use later.
- Transfer the blackberries and sugar to a saucepan, squeeze over the lemon and bring to a gentle simmer over a low heat, stirring occasionally until the sugar has fully dissolved. Simmer for 10 mins before drizzling a little jam on the chilled plate. If when you push your finger through the jam it starts to wrinkle, the jam is ready; if it’s still runny, cook for a further 2-3 mins and retest until the jam wrinkles. Return the plate to the freezer between each test to keep it cold. Set aside to cool for 15 mins to ensure the berries are evenly suspended through the jam when jarred.
- Spoon the jam into warm, sterilised jars, cover with a lid and store in a cool dry place for up to 6 months. Chill in the fridge for up to 1 month once opened.
Tip: To sterilise your jars, wash them in hot, soapy water, rinse well and dry, upside down on the rack of a preheated oven at 170°C, fan 150°, gas 3 for 15 mins.
