Ingredients
- 15g salted butter
- ½ shallot, finely diced
- 100ml white wine
- 100ml whipping cream, plus 1 tbsp
- 1 tsp Worcester sauce
- 110g British Blue Stilton, roughly crumbled

Method
- Melt the butter in a frying pan (or the pan you’ve cooked the steak in) over a low heat. Add the shallot and cook for 4-5 mins until soft. Increase the heat to high and add the white wine, bubbling for 2-3 mins until it’s reduced.
- Reduce the heat to low-medium and add 100ml cream, the Worcester sauce and Stilton, reserving a little to serve. Cook, stirring for 5-6 mins, until the cheese has completely melted and the sauce has thickened to a pourable consistency.
- Remove from the heat and add the remaining 1 tbsp cream. Pour over the steak, topping with the reserved Stilton.
