Made with only 4 ingredients, these quesadillas are made using Christmas leftovers. Load tortillas with brie and cranberry sauce, then fry until the cheese has melted to make a festive lunch or snack. See method
Ingredients
- 2 packs Tesco Free From 4 white tortilla wraps
- 4 heaped tbsp cranberry sauce, plus extra to serve
- 300g vegetarian Brie, thinly sliced
- rocket, to serve (optional)

Method
- Lay out 4 of the wraps on a clean work surface or board.
- Spoon the cranberry sauce onto the wraps and spread over with a knife. Divide the cheese slices between the wraps, along with the rocket, reserving a handful to serve.
- Place the remaining tortillas on top of the wraps as ‘lids’.
- Dry fry each one in a frying pan over a medium heat for 2-3 mins, until the cheese has melted and the quesadillas are golden brown and toasted. Turn to toast the other side.
- Cut into quarters to serve, with a small pot of extra cranberry sauce, or serve whole.
Tip: If you don’t have Brie, Cheddar, Comté or Gruyère would work well, or a mixture!
