Ingredients
- 1 onion, finely diced
- 1 garlic clove, finely diced
- olive oil, for frying
- 1 head of broccoli, roughly chopped
- 1 veg stock cube
- 200ml whole milk
- 2 tbsp crunchy peanut butter
- wholemeal bread, to serve

Method
- In a saucepan, fry the onion and garlic in olive oil for 2 minutes.
- Add the broccoli and crumble over the stock cube. Pour in 400ml of freshly boiled water and add the milk. Bring up to the boil, then reduce the heat and gently simmer for 10 minutes. Remove from the heat.
- Using a stick blender or heat resistant liquidiser, whizz the soup until smooth. Stir in the peanut butter, until completely melted; season to taste. Serve with crusty wholemeal bread.
