Broccoli noodles with soy, lime and chilli dressing recipe

Ingredients
- 250g (8oz) fresh egg noodles
- 400g (13oz) tenderstem broccoli, cut into 2·5cm (1in) pieces
- 2 carrots, cut into julienne strips
- 4 tbsp roasted peanuts, chopped
For the dressing
- 4 tbsp reduced salt soy sauce
- 3 tbsp soft brown sugar
- 2 red chillis, deseeded and thinly sliced
- 1 garlic clove, finely chopped
- 2·5cm (1in) piece ginger, chopped
- juice of 2 limes
- 1 tbsp rice wine vinegar
If you haven't got any egg noodles, try using pasta like spaghetti instead

Method
- Mix the dressing ingredients in a bowl. Cook the noodles according to pack instructions. Drain and tip into a large bowl. Add the dressing and mix well.
- Steam the broccoli with the carrots until al dente. Toss the veg through the noodles and scatter with the peanuts.
