- 85g (3oz) light brown muscovado sugar
- 50ml (2fl oz) brandy

Is it even Christmas without brandy butter? This flavoursome and simple to make brown sugar version goes well with Christmas pudding, mince pies, Christmas cake, or in fact anything you fancy. Scale the recipe up for more guests.
- Put the butter in a large bowl and whisk with an electric hand whisk until light and fluffy. Gradually add the sugar, whisking continually, until incorporated. Continue whisking, while slowly adding the brandy until the mixture is smooth. If the mixture splits, add a little more sugar and it will come back together.
- Cover with clingfilm and set aside somewhere cool, but not in the fridge, until ready to serve with the Christmas pudding.
