Method
- In a frying pan over a high heat, fry the bacon until crisp, then transfer to a board and finely chop into crumbs. Leave the bacon fat in the pan.
- Mix the eggs and egg yolk and most of the Parmigiano Reggiano (reserving a little to serve) in a bowl, then slowly drizzle in half the saved bacon fat and mix together. Season with lots of black pepper and a little salt.
- Put the frying pan back over a medium heat and cook the beans until warmed through.
- Take the pan off the heat, then add the cheese-egg mixture and mix until silky and smooth, adding the bean water to thicken if needed.
- Serve in bowls with the bacon crumb sprinkled over the top and the remaining Parmigiano Reggiano cheese.
