Ingredients
- 1 tbsp butter
- 1 tbsp fresh coriander, chopped
- 4 brioche burger buns, halved
- leftover butter chicken (see tip, below)
- 150g grated mozzarella cheese

Method
- Preheat the oven to gas 4, 180°C, fan 160°C.
- Melt the butter in a small bowl in the microwave for 10 secs burst. Then stir in the chopped coriander. Set aside.
- Slice buns in half and place the bottoms on a baking tray or dish. Spoon on the leftover butter chicken and cover with the mozzarella cheese. Add the bun tops and brush with the melted coriander butter.
- Cover with foil and bake for 15 mins or until the cheese has melted.
