Method
Caramelising your fruit is one of the easiest ways you can enjoy dessert. De-stone ripe nectarines and gently season with sugar, then roast until soft, jammy and browned and serve with your vanilla and honey-spiked yogurt - simply delicious.
- Place the nectarines on a roasting tray, sprinkle half a teaspoon of soft brown sugar on each nectarine half and roast in a pre-heated oven (180°C, 350°F, Gas mark 4) for 15 minutes until the nectarines are soft and the sugar has turned gold brown. Meanwhile, place the Greek yogurt into a bowl and stir in the honey and vanilla extract.
- Remove the nectarines from the oven, divide equally into 4 dessert bowls, spoon the Greek yogurt on top, sprinkle with a little extra brown sugar and serve.
