Is there anything more comforting and satisfying than a pasta bake? How about making it a cauliflower cheese pasta bake? Roasting the cauliflower brings out its natural sweetness, which works wonderfully with the creamy cheese sauce. This is an epic family dinner that's so simple to make. See method
Ingredients
- 1 cauliflower, broken into florets
- 2 tbsp vegetable oil
- 300g penne
- 1 onion, thinly sliced
- 3 tbsp plain flour
- 450ml milk
- 100g mature grated Cheddar
- 15g fresh flat-leaf parsley, finely chopped
- 50g wholemeal bread, blitzed to crumbs
If you haven't got penne, try using fusilli or another short pasta

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Add the cauliflower to a baking tray, toss with 1 tbsp oil, then roast for 20 mins or until beginning to char and soften.
- Cook the pasta according to pack instructions; drain.
- Meanwhile, heat the remaining oil in a saucepan over a medium heat; cook the onion for 10 mins. Stir through the flour and cook for 2 mins. Gradually whisk in the milk to create a smooth sauce. Remove from the heat and stir through 80g cheese until melted.
- Add the pasta and most of the parsley, stir to coat, then transfer to a baking dish and mix through the cauliflower. Top with the breadcrumbs and remaining cheese. Bake for 10 mins or until golden and crisp. Scatter over the remaining parsley to serve.
