Ingredients
- 275g plain flour
- 1tbsp baking powder
- 1 tsp caster sugar
- 125g mature cheddar cheese, grated
- 125g cooked ham, chopped
- 7 sundried tomatoes in oil, drained and chopped
- 2tbsp chives, freshly snipped
- 2 medium eggs
- 200ml (7floz) buttermilk or semi-skimmed milk
- 90ml (3½floz) sunflower oil
If you don't have any Cheddar, try using another hard cheese

Method
Cheese and ham is a classic flavour combination and these easy savoury muffins are a great way to enjoy it. This delicious recipe comes together in just 30 minutes and the muffins can be easily frozen for a grab and go breakfast whenever you need it.
- Preheat the oven to gas 5, 190ºC, fan 170ºC. Line a muffin tin with 12 paper muffin cases. Sift together the flour and baking powder in a large bowl.
- Mix in the sugar, ½tsp salt, 75g (3oz) cheese, ham, sundried tomatoes and chives.
- In another bowl, beat together the eggs, buttermilk (or milk) and oil and pour over the dry ingredients. Stir until just combined, fill the muffin cases and sprinkle the tops with the remaining cheese. Bake for 20-25mins until risen.
