Cheeseburgers with sweet potato fries recipe

Ingredients
- 1 sweet potato, cut into 1cm thick wedges
- 1 tsp vegetable oil
- 250g 5% fat beef mince
- 2 garlic cloves, finely crushed
- ½ onion, finely chopped
- 25g lighter mature Cheddar, grated
- 2 wholemeal baps, sliced in half
- ¼ iceberg lettuce, finely shredded
- 1 loose vine tomato, sliced
If you don't have mince, cut open some sausages instead

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Toss the sweet potato in the oil on a large baking tray and roast for 20 mins.
- Meanwhile, mix the mince, garlic and onion together until well combined. Shape into 2 beef patties, roughly 1cm thick, and place on a baking tray.
- Preheat the grill to high. Cook the burgers under the grill for 5 mins on each side. Top with the Cheddar and grill for 1-2 mins until melted.
- Fill the baps with the mayonnaise, lettuce, beef patties and tomato. Serve with the sweet potato wedges and any extra lettuce and tomato on the side.
