Cheesy pizza balls recipe

Melting Cheddar cheese, spicy pepperoni, creamy mash - these cheesy pizza balls have it all. Using ready made mashed potato for a clever shortcut, these cheese-filled croquettes are coated in breadcrumbs and baked until golden and crisp for a super indulgent winter snack to share. See method
Ingredients
- 425g pack mashed potato
- 12 pizza pepperoni slices
- 120g Cheddar, sliced into 12 5 x 1cm sticks
- 1 garlic clove, crushed
- 15g fresh basil, finely chopped
- 5 tbsp plain flour
- 2 eggs, lightly beaten
- 175g panko breadcrumbs
- 4 tbsp tomato ketchup, to serve

Method
- Preheat the oven to gas 7, 220˚C, fan 200˚C. Heat the mashed potato in the microwave for 2 mins, then stir until smooth. Set aside to cool.
- Wrap a slice of pepperoni around each piece of Cheddar and set aside. Stir the garlic and basil into the mashed potato until well combined.
- Lightly oil your hands with a little vegetable oil (this will prevent the mash from sticking). Take 1 tbsp of the mash and flatten it into a circle in the centre of your palm. Place a piece of pepperoni-wrapped Cheddar in the centre of the mash, then shape into a ball by bringing up the sides and sealing at the top. Repeat with the remaining mash and Cheddar.
- Put the flour in a bowl, the egg in another, and breadcrumbs in a final bowl. Coat each ball in the flour, then the egg (shaking off any excess) and finally roll in the breadcrumbs. Place on a lined baking tray and repeat with all the balls.
- Bake for 8 mins. Serve immediately, with ketchup for dipping.
