Ingredients
- 1 free-range egg white
- 4 tsp yeast extract (such as Marmite)
- 1 tsp brown sugar
- 250g mixed nuts
- 100g 4 seed mix
- 75g sea salt and black pepper crackers
- 25g mature Cheddar, grated
- ½ tsp paprika
- ½ tsp dried thyme
- 100g salted pretzels
If you don't have any Cheddar, try using another hard cheese

Method
- Preheat the oven to gas 4, 180°C, fan 160°C. Whisk the egg white, yeast extract and brown sugar in a big bowl. Tip in the mixed nuts and seed mix and stir to coat. Spread the nuts and seeds out over 1-2 baking sheets and bake for 10 mins.
- Meanwhile, spread out the sea salt and black pepper crackers on another tray and sprinkle with grated mature Cheddar.
- Remove the nut mix from the oven, sprinkle over the paprika and dried thyme and toss to coat. Bake the crackers for 5 mins and the nut mix for a further 5-10 mins, until brown and sticky. Leave both to cool, stirring the nuts occasionally to help them crisp up. Snap the crackers into bite-sized chunks. Tip both into a bowl and toss with the salted pretzels. Tuck in, or store in an airtight jar for up to 1 week.
