Method
Turn your favourite salad into a hearty sandwich. Coat ready to eat chicken in homemade Caesar dressing with capers, then load into a ciabatta roll with anchovy fillets and Parmesan shavings - this is sure to liven up lunchtime.
- In a large bowl, mix together the yogurt, mayo, lemon zest and juice, grated Parmesan, minced garlic, mustard and Worcestershire sauce. Season well with black pepper and a little salt. Stir through the capers and set aside.
- Heat a griddle pan or frying pan over a high heat. Slice the ciabatta in half and then in half lengthways. Drizzle the oil on the cut sides and griddle the ciabatta cut-sides down for a few mins, until lightly charred. Using the whole garlic clove, lightly rub it over the charred ciabatta for extra flavour.
- When ready to serve, toss the chicken and shredded lettuce through the dressing making sure everything is evenly coated. Pile onto the bottom halves of the ciabatta and top with a couple of anchovies, if using, and extra Parmesan shavings. Cut in half and eat immediately or wrap in foil for your packed lunch.
Tip: You can swap the homemade dressing with 3-4 tbsp Tesco Caesar Dressing, if you prefer.
