This fantastic chicken Marbella will become a firm favourite – not only is it really easy to prepare, but it tastes wonderfully delicious. With tender chicken thighs, plenty of veg, and capers and olives for extra depth, it's sure to satisfy. See method
Ingredients
- 75ml (3fl oz) red wine vinegar
- 30ml (2 tbsp) olive oil
- 100g (3½oz) dried apricots, halved
- 75g (3oz) pitted green olives
- 40g (1½oz) baby capers, plus a little of their juice
- 3 cloves garlic, crushed
- 8 chicken thigh fillets, skinned
- 2 bay leaves
- 75ml (2 1/2fl oz) white wine
- 5g (1 tsp) dried oregano
- 40g (1½oz) brown sugar

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Combine the red wine vinegar, olive oil, apricots, olives, capers and garlic in a small bowl.
- Lay the chicken thighs in a 1.5 litre ovenproof dish. Add your mixture and nestle in the bay leaves. Pour in the white wine and sprinkle over the oregano and brown sugar.
- Bake for 25 mins, until the meat has cooked through with no pink showing. Serve with wilted winter greens and baby potatoes.
