These easy chicken nuggets are made with a secret ingredient... Blitzed cauliflower is added to the mixture to help get the kids eating their veg - they'll never know and they taste delicious! See method
Ingredients
- 500g chicken mince
- 200g cauliflower florets
- 150g breadcrumbs
- 50g Parmesan
- ½ tsp garlic powder
- 2 large eggs
- carrot and cucumber sticks, to serve

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Meanwhile, add the mince, cauliflower, 50g breadcrumbs, Parmesan, garlic powder and 1 egg to a food processor and blend until combined.
- Place the remaining breadcrumbs in a shallow bowl and crack the other egg into a separate bowl and whisk. Line a baking tray with baking paper, then scoop out 1 tbsp of the chicken mixture and use clean hands to shape into a circular nugget. Dip in the beaten egg followed by the breadcrumbs, then place on the baking tray, then repeat until 24 nuggets are made (6 per person).
- Bake for 20 minutes, then allow to cool a little before serving with carrot and cucumber sticks and your favourite dipping sauce.
Tip: If you don’t have a food processor, you can combine all the ingredients (finely chopped cauliflower) by hand in a mixing bowl.
