Chicken wings with chilli and lemon recipe

Add a bit of spice to your life with these moreish chicken wings – they make for a great starter. Make sure you have plenty of napkins on hand to eat them with! See method
Ingredients
- 12 chicken wings, tips removed
- 3tbsp (45ml) olive oil
- 3 lemons, 2 zested and juiced, 1 halved
- 4 bay leaves
- 1/2 red chili, finely chopped
- 6 garlic cloves, left unpeeled
- 2tbsp (30ml) honey
- 1tsp (5ml) mustard seeds
- 1tsp (5ml) coriander seeds

Method
- Preheat oven to gas 5, 190°C, fan 170°C. Take the wings and bend them apart backwards so that you can easily cut through the knuckle with scissors or a knife.
- In a large bowl, mix together the olive oil, lemon zest and juice, bay leaves, chilli, garlic, 1 tbsp honey, mustard and coriander seeds. Add the chicken wings and turn to coat thoroughly. Season to taste.
- Arrange the wings on a roasting tray lined with nonstick baking paper and roast for 30 minutes, turning every 10 minutes or so. Remove from the oven then drizzle over the remaining 1 tbsp honey and squeeze over the lemon juice from the halves. Return to the oven and roast for another 10 minutes, until cooked through with no pink showing. Serve immediately.
