Looking for a quick and easy dinner? Look no further. This simple healthy chilli prawn stir-fry, with colourful red pepper, pak choi and broccoli packs a flavour punch and is ready to eat in 20 minutes. See method
Ingredients
- 2 tbsp sesame oil
- 1 red chilli, cut into thin strips
- 3cm piece ginger, peeled and chopped
- 2 garlic cloves, sliced
- 1 red pepper, deseeded and sliced
- 200g Tenderstem broccoli, cut into long, thin slices
- 6 spring onions, thinly sliced
- 200g raw peeled prawns
- 2 pak choi, sliced
- 150g rice noodles
- 4 tbsp soy sauce
- 3 tbsp sweet chilli sauce
- 1 tbsp sherry or rice wine vinegar
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

Heat the sesame oil in a wok or large frying pan over a high heat. Cook the chillies, ginger and garlic for 30 secs, then add the pepper, broccoli, spring onions and prawns. Cook for 4-5 mins until the prawns have turned pink and the vegetables have softened.

Add the pak choi, noodles, soy sauce, chilli sauce and vinegar to the pan. Cook for 1-2 mins until fully heated through, then serve immediately.
