Chinese pork spare ribs recipe

Try something different with these succulent Chinese pork spare ribs. Tender pork ribs are cooked in a glossy soy marinade with added peppers and spring onions – serve with plenty of white rice for all the extra sauce. See method
Ingredients
- 50ml groundnut oil
- 400g pork spare ribs
- 1 red pepper, de-seeded and diced
- 1 green pepper, de-seeded and diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 spring onions, sliced
- 1 red chilli, de-seeded and finely diced
- 2tbsp oyster sauce
- 150ml water
For the marinade
- 2tsp caster sugar
- 2tbsp light soy sauce
- 2tbsp dry sherry
- 1tbsp cornflour
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Whisk together the ingredients for the marinade until smooth and use it to coat the pork spare ribs. Cover and leave to marinate for 30 mins.
- After marinating, heat the groundnut oil in a large wok over a moderate heat until hot. Stir-fry the pork ribs for 1 min, then remove from the wok and dry on kitchen paper. Add the spring onions, onion, garlic, red chilli and peppers to the wok, stir-frying for 2-3 mins.
- Add the ribs back to the wok, then stir in the oyster sauce and water. Bring to the boil, then reduce to a simmer, cover the wok, and gently simmer the ribs for 12-15 mins, stirring occasionally. Remove from the heat and arrange on a long platter. Serve immediately.
