Dark chocolate, creamy coconut and sweet cherries is a heavenly flavour match, re-created in these indulgent sharing sundaes. You can prep everything in advance, then assemble just before serving. See method
Ingredients
- 400g pitted cherries
- 150g caster sugar
- creamy dark chocolate sorbet (see recipe, below)
- coconut sorbet (see recipe, below)
- toasted, dessicated coconut (optional)

Method
- Cook the cherries in a saucepan with the caster sugar and a splash of water for 8-10 mins, until starting to break down. Leave to cool completely, then blitz smooth.
- Layer up scoops of the creamy dark chocolate and coconut sorbets, drizzle with the cherry coulis and top with extra cherries and toasted desiccated coconut, if you like.
