Nothing beats a homemade salsa and this recipe with juicy cherry tomatoes and the heat of red chilies, is a real crowd-pleaser. It's versatile enough to be served as an appetizer with a handful of tortilla chips or as a relish to spice up barbecued meats, chicken and fish. See method
Ingredients
- 300g (10oz) cherry tomatoes, quartered
- 1/4 small red onion, sliced into thin slivers
- 1 plump red chilli, seeds removed (or leave some in if you like the heat), finely chopped
- 1tbsp lime juice
- 1 tbsp olive oil
- ¼ tsp caster sugar
- 1 rounded tbsp flat leaf parsley
- 2 tbsp chopped basil
If you don't have red onions, try using white, brown or spring onions

Method
- Tip the tomatoes into a bowl with the red onion slivers and chopped chilli. Pour over the lime juice and olive oil, then gently stir in the sugar, parsley and basil. Season with a little salt and pepper to taste.
- Goes well with barbecued meats, chicken and fish, or with tortilla chips as an appetizer.
