Ingredients
- 12 scallops
- 2tbsp grapeseed oil
- 1tbsp butter
- 1tbsp snipped chives
Dressing
- juice 1 lime
- juice 1 lemon
- 1tbsp soy sauce
If you don't have any limes, try a lemon instead

Method
- Mix together the dressing ingredients and set aside.
- Heat the oil and butter in a nonstick frying pan. When hot add the scallops and cook for 2 minutes per side. Remove from the pan and slice in half horizontally. Arrange between 4 plates, drizzle some of the buttery pan juices on top, spoon over the dressing and scatter over the chives.
