Classic Christmas mincemeat recipe

This really easy mincemeat recipe just requires mixing all the ingredients – including cherries, almonds and a tot of alcohol of your choice – together. It will last a very long time if kept in an airtight container, so you can make this well in advance of making another recipe or giving it as a gift. See method
Ingredients
- 2 large eating apples, grated, skin on
- 500g Tesco Dried Mixed Fruit
- 60g glace cherries, chopped in 4 pieces
- 60g chopped almonds (optional)
- 100g shredded suet (beef or, to make this recipe vegan, use vegetarian suet)
- 175g soft dark brown sugar
- 2tbsp golden syrup
- zest and juice of 1 lemon
- zest and juice of 1 orange
- 2tsp mixed spice
- 4tbsp brandy, Amaretto or rum

Method
- Start by sterilising jars. Preheat the oven to gas 1, 140°C, fan 120°C. Sterilise 4 x 350ml jam jars and lids by lowering them into a pan of boiling water; leave for 1-2 minutes. Using tongs, carefully lift out. Place the jars in the oven to dry. Once completely dry, remove and set to one side to cool.
- Put all the ingredients in a large bowl and mix thoroughly. Cover with clingfilm and allow flavours to blend overnight. The next day, stir the mincemeat to mix thoroughly, and pot in sterilised jars. Allow the flavours to blend for a couple of days before using.
