Seasonal clementines are sweet, juicy and packed with fresh flavour. Pair with sharp grapefruit and pomegranate jewels and finish with a drizzle of ginger-spiced honey and sprinkling of fresh mint for a vibrant citrus salad that makes the perfect winter starter, breakfast or dessert. See method
Ingredients
- 4 clementines, peeled and sliced into rounds
- 2 grapefruits, peeled and segmented, any juice reserved
- 250g pack pomegranate seeds
- 3cm piece ginger, peeled and finely grated
- 4 tbsp clear honey
- 4 mint sprigs, leaves picked and most shredded

Method
- Arrange the clementine rounds and grapefruit segments on a large platter and drizzle over any reserved juice. Sprinkle over the pomegranate seeds.
- Mix the ginger with the honey and drizzle over the salad. Sprinkle over the mint leaves and a pinch of salt. Chill for 30 mins before serving. Will keep in an airtight container in the fridge for up to 2 days.
