This veggie twist on coronation chicken is the perfect filling for sandwiches or wraps. Mix boiled eggs in a classic 'coronation' sauce with curry powder, mango chutney and mayonnaise, then serve whichever way you fancy. You can prep this filling ahead of time to enjoy for lunches all week long. See method
Ingredients
- 6 large eggs
- 1 tbsp Greek-style yogurt
- 1½ tbsp mayonnaise
- ½ tbsp mango chutney
- 1 tsp curry powder
- 25g sultanas
- salad cress

Method
- Bring a pan of water to the boil, add the eggs and simmer for 8 mins. Drain and then run under cold water to stop them from cooking anymore.
- Once cool enough to handle, remove the shells and place on a large chopping board. Roughly chop into chunky chunks.
- Add the yogurt, mayo, mango chutney, curry powder and sultanas to a bowl. Season, then stir well to combine.
- Add the eggs and cress and stir to coat.
- Enjoy straightaway or decant into Tupperware. It will keep for 3-4 days in the fridge.
Tip: Serve in wraps, as a sandwich or in Little Gem lettuce cups.
