Inspired by the classic Cosmopolitan cocktail, this grown-up take on jelly and ice cream is perfect for parties. It takes just 15 minutes to prepare, then leave it to chill for 4 hours until the jelly has set. See method
Ingredients
- 135g pack strawberry jelly
- 50ml triple sec
- 100ml vodka
- juice of 2 limes
- 200ml cranberry juice
- 200g fresh raspberries
- 6 scoops Tesco Finest vanilla ice cream
- lime or orange zest
If you don't have any limes, try a lemon instead

Method
- Chop up the strawberry jelly and stir vigorously in a heatproof jug with 200ml boiling water until fully dissolved.
- Add the triple sec, vodka, lime juice and cranberry juice, and mix well.
- Divide the raspberries between serving glasses, then pour over the jelly mixture. Put in the fridge to set for at least 4 hrs or overnight.
- To serve, top each with a scoop of ice cream and finish with a twist of lime or orange zest.
