Tuck into this hearty family favourite made with sausages, peppers, paprika and a tin of beans; it's a cosy recipe to add to your midweek meal repertoire. Serve with crusty bread to mop up all the delicious smoky sauce. See method
Ingredients
- 6 reduced-fat Cumberland pork sausages
- 2 tsp vegetable oil
- 2 red onions, thinly sliced
- 3 garlic cloves, finely crushed
- 3 peppers, deseeded and thinly sliced
- 1 tbsp smoked paprika
- 1 tbsp ground cinnamon
- 420g tin baked beans
- 400g tin chopped tomatoes
- 2 tbsp BBQ sauce
- crusty bread, to serve (optional)
- 60g Cheddar cheese, grated (optional)
If you don't have red onions, try using white, brown or spring onions

Method
- Heat 1 tsp oil in a large saucepan over a medium heat. Add the sausages and fry for 12-15 mins, turning occasionally until evenly golden. Remove the sausages from the pan and set aside.
- Wipe the pan clean then heat another tsp of oil over a medium heat, add the onions and cook for 5 mins until translucent. Stir through the garlic, peppers, paprika and cinnamon and cook for 2 mins until the spices and garlic are fragrant. Mix in the baked beans, chopped tomatoes, BBQ sauce, 300ml boiling water and cooked sausage chunks. Bring to the boil, then reduce to a simmer and cook for 20 mins, stirring occasionally, until the sauce has thickened.
- Serve in bowls topped with freshly ground black pepper with a chunk of crusty bread and Cheddar cheese, if using.
