Method
- Put the potatoes into a large pan and cover with cold water. Season with salt, then bring to the boil and simmer vigorously for 12-15 mins until fork tender. Drain and allow to steam dry. Mash well with the milk, plenty of seasoning and half the cheese. Set aside.
- Meanwhile, preheat the oven to gas 6, 200°C, fan 180°C. Heat half the oil in a large saucepan and brown the mince over a medium-high heat for 5-6 mins, breaking up with a wooden spoon as you go. Remove using a slotted spoon and set aside.
- Heat the remaining oil in the pan and cook the onion and peppers for 4-5 mins until beginning to soften. Stir in the spices, BBQ sauce and tomato purée and cook for 1 min until fragrant.
- Stir in the chopped tomatoes (swirling out the can with a splash of water) and beans (including the tin liquid), then return the mince to the pan. Bring to a simmer and cook for 8-10 mins until thickened slightly.
- Transfer the mince mixture to a baking dish about 21cm square. Use an ice cream scoop to spoon on the mash, then sprinkle with the remaining cheese. Bake for 25-30 mins until bubbling and golden. Serve with steamed greens.
Tip: Use beef mince or plant-based if you prefer.
