These crab cakes are luxurious yet surprisingly easy to prepare: dressed crab is mixed with mashed potato, flavoured with chilli, pepper, parsley and spring onions, then coated with breadcrumbs and fried. Serve with mayonnaise and a green salad for a delicious starter or light main course. See method
Ingredients
- 250g potatoes, peeled
- 1 dressed crab
- freshly ground black pepper
- 2 spring onions, very finely chopped
- 1 tbsp finely chopped parsley
- ½ red chilli, deseeded and finely chopped
- 1 egg, beaten
- 100g breadcrumbs
- vegetable oil for frying
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Boil the potatoes until soft and mash thoroughly. Fold in the dressed crab. Mix in the spring onions, parsley and chilli. Shape mixture into 12 small cakes about 4cm across.
- Dip cakes into the egg and coat in breadcrumbs. Heat the oil in a shallow pan and fry the cakes on each side for 3-4 minutes. Serve with lime wedges, salad leaves and mayonnaise.
