Ingredients
For the dressing
- 2tbsp extra-virgin olive oil
- 1 shallot, finely diced
- 1tbsp red wine vinegar
- 1tsp honey
For the salad
- 1 red apple
- 150g (5oz) white crabmeat or 1 x 170g tin drained white crab meat
- 1 celery heart (the inner stalks), thinly sliced, reserving leaves
- 1 large handful wild rocket

Method
A healthy, dairy-free salad that's great as a starter at your dinner party. This easy salad can be made in just 10 minutes and combines sweet apple and white crabmeat with crisp celery, peppery rocket and a balanced vinegar and honey dressing.
- To make the dressing, put the ingredients in a bowl, season with salt and pepper and mix well.
- Core and thinly slice the red apple into discs and arrange on the plate. Mix together the crab, celery slices and rocket leaves in a bowl, then arrange on top of the apple slices.
- Drizzle over the dressing, serving any remaining dressing on the side.
