Ingredients
- 350g Hearty Food & Co penne pasta
- 1 tbsp oil
- 1 brown onion, finely sliced
- 1 red pepper, finely sliced
- 15g fajita seasoning (from a 30g pack)
- 15g coriander, roughly chopped, some leaves reserved for serving
- 300g reduced-fat crème fraîche
- 210g ball Creamfields mozzarella, roughly torn
- 25g Stockwell & Co lightly salted tortillas
If you haven't got penne, try using fusilli or another short pasta

Method
- Cook the pasta for 1-2 mins less than pack instructions. Drain, reserving about two ladlefuls of pasta water.
- Meanwhile, heat the olive oil in a frying pan over a medium-high heat and fry the onions and peppers for 5-7 mins until softened and lightly charred. Stir in the fajita seasoning and coriander, and fry for a couple more mins.
- Turn the heat down and stir in the crème fraîche, along with the pasta. Stir to combine, adding some of the pasta water to create a silky sauce.
- Tip into a baking dish, then top with the mozzarella and crushed tortillas. Place under a hot grill and grill for 5 mins until golden and bubbling.
