Crispy pepper and sweetcorn pizzas recipe

A packed-full-of-veg pizza recipe made easy with wholemeal tortillas instead of pizza dough; easy for you to make and fun for kids to eat. You can top the pizzas with any of your child's favourite veggies; try courgettes, spinach or mushrooms. See method
Ingredients
- 1 tbsp olive oil
- 2 garlic cloves, finely chopped
- 1 red pepper, deseeded and finely sliced
- ½ 400g tin chopped tomatoes
- ¼ head of broccoli, cut into small florets
- 4 wholemeal tortilla wraps
- 160g tin sweetcorn
- 2 spring onions, sliced
- 80g grated Grana Padano
- ¼ cucumber portion, cut into sticks, to serve
- 1 carrot, peeled and cut into sticks, to serve
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Heat the oil in a frying pan over a medium heat, then add the garlic and red pepper and cook for 1 min. Add the tomatoes and cook for 8-10 mins until reduced and the pepper has softened.
- Meanwhile, simmer the broccoli in a pan of boiling water for 2 mins, then drain.
- Lay 4 wraps on a baking tray. Spread the tomato and pepper sauce over each wrap, then scatter over the broccoli, sweetcorn, spring onions and cheese. Bake for 8-10 mins.
- Serve with the cucumber and carrot sticks on the side.
