To accompany Derek’s veggie BBQ mushroom buns, this simple spring green salad ticks all the boxes. Made with just a few ingredients, the citrus dressing really lifts the red onion and greens to make a fresh and vibrant salad. Serve alongisde sweet potato and rosemary fries for an even more delicious feast. See method
Ingredients
- ½ red onion, thinly sliced
- 2 x 80g watercress, spinach and rocket salad
For the dressing
- ½ orange, juiced
- 2 tsp Dijon mustard
- 2 tbsp olive oil

Method

- Make the dressing by whisking together the ingredients with a little seasoning.
- When ready to serve, mix the leaves in a salad bowl and scatter over the onion (use the leftover onion from the ‘Shroom buns). Drizzle with the dressing and gently toss together to serve, season with black pepper and sea salt.
