This is a grown-up dressing with a real kick! Use it on a classic ‘wedge’ salad (with lettuce, cucumber, avocado and chives), roasted vegetables, steamed broccoli or other green vegetables. See method
Ingredients
- ½ garlic clove
- 1 heaped tsp Dijon mustard
- 1 tbsp dry vermouth
- 1 tbsp brine (from a jar of green olives)
- 1 tbsp sherry vinegar
- 4 tbsp extra-virgin olive oil
- 6 pitted green olives, finely chopped

Method
- Rub the cut side of the garlic clove liberally all over the inside of a mixing bowl so the dressing will take on the flavour. Add the Dijon mustard, dry vermouth, brine and sherry vinegar; whisk until smooth.
- Slowly pour in the extra-virgin olive oil, whisking continuously, until emulsified. Stir in the green olives and season with black pepper. Use straight away or store in an airtight container in the fridge for up to 3 days.
Tip: Swap the alcohol for an extra ½ tbsp each sherry vinegar and olive brine.
