Switch up a classic mojito cocktail in this English garden-inspired drink. Mix Summer Cup with refreshing soda water, plenty of ice and zingy lime for the ideal summer cooler. See method
Ingredients
- 2 long ribbons of cucumber
- handful ice cubes
- 4 mint sprigs, leaves picked
- 100ml Summer Cup
- 25ml simple sugar syrup
- 2 limes, juiced
- 300ml soda water, chilled
If you don't have any limes, try a lemon instead

Method
- Wrap a ribbon of cucumber around the inside of 2 highball glasses. Fill with ice cubes and mint.
- In a jug, mix together the Summer Cup, sugar syrup, lime juice and soda. Divide between the glasses and serve.
Tip: You can buy ready-made sugar syrup, but it’s also easy to make at home and lasts for up to a week in the fridge. Simply heat together equal quantities of caster sugar and water in a saucepan until the sugar has dissolved, then leave to cool at room temperature before using.
