Ingredients
- 50g butter, room temperature
- 1 whole chicken (weighing about 2kg)
- 10 shallots, peeled and left whole
- 750g black grapes
- 1 garlic bulb, sliced in half
- 250ml white wine
- fresh thyme sprigs, to serve (optional)

Method
- Preheat the oven to gas 7, 220°C, fan 200°C.
- Ease the butter under the skin of the chicken breast. Place the shallots in a roasting tin and sit the chicken on top. Season with salt and pepper. Put in the oven and reduce the oven temperature to gas 5, 190°C, fan 170°C. Cook for 1 hr 20-30 mins in total. Thirty mins before the end of the cooking time, tuck the grapes and garlic around the chicken and pour over the white wine.
- Return to the oven for the remaining cooking time or until the chicken is golden brown and cooked through and the grapes have softened but still hold some shape.
- Place the chicken and grapes on a platter with the softened shallots, garlic and thyme sprigs, if using. Pour the juices into a jug or pour over the chicken and spoon out of the platter. Serve alongside mashed potato or polenta with a bowl of greens.
