Ingredients
- 300g (10oz) pasta shapes
- 2 tsp olive oil
- 1 large clove garlic, crushed
- ½-1 red chilli, finely chopped (to taste)
- 200g (7oz) cold water prawns
- 2 medium courgettes, grated
- 1 small or ½ large lemon, juiced and zested
- small bunch basil

Method
- Cook the pasta to pack instructions. Meanwhile, put the oil, garlic, chilli and prawns in a bowl and combine everything together.
- Just before the pasta is cooked, add the courgette for the final minute or two, then drain it all together. Return the pan to the heat, add the contents of the bowl and cook for 2 minutes. Put the pasta back in the pan, along with the lemon zest, juice and basil. Toss together and serve immediately.
