Ingredients
- 25g butter
- 2 garlic cloves, finely chopped
- 200g portobello mushrooms, sliced
- 1 tsp thyme leaves
- 2 slices sourdough bread, lightly toasted
- 75g (3oz) soft goat’s cheese
- 4 tsp green pesto
- green leaves, to serve (optional)

Method
- Melt the butter in a frying pan. Add the garlic and cook for a minute, until fragrant, then add the mushrooms, thyme and a little seasoning. Cook for 5-8 minutes, until the mushrooms have softened and any released juice has mostly bubbled away.
- Meanwhile, spread the toasted bread with the goat’s cheese. Divide the mushrooms between each slice and drizzle over the pesto. Serve with a handful green leaves, if you like.
